66 MARKET WATCH MARKETWATCHMAG COM SEPTEMBER 2018PHOTO BY TK TKSherry brings depth and character to the cocktail glassBy Sally KralMIXOLOGYSHERRY66 TKAlthough Sherry has been widely consumed through out Europe and the United Kingdom for centuries the Spanish fortified wine has only recently made its way into the spotlight stateside largely thanks to U S consumers increased appreciation for classic cocktails I think the cocktail boom is solely responsible for the rise in awareness of Sherry in the United States says Matt Marti nez bar manager at the Tucson Arizona restaurant Bird Everyone whos inter ested in creating original cocktails now inevitably experiments with Sherry Andrew Pollard assistant director of beverage develop ment for the Wynn Las Vegas resort notes that as the bever age industry continues to evolve awareness of histori cally relevant ingredients like Sherry grows with it Sherry in cocktails dates back to some of the oldest punch reci pes and many of our favorite classics as well so I believe well continue to see the cate gory grow for years to come Indeed mixologists are experimenting with Sherry in their cocktails more and more notes Jon Howard head bartender at Henley in Nashville Tennessee and as they do so theyre discover ing that its varied styles flavors and textures make it a wonderfully versatile cocktail component The best part about whats going on in our industry right now is that people are breaking the chains so to speak and using ingredients like Sherry in fantastic new ways he says Endless ApplicationsHoward adds that as recently as five years ago bars offering Sherry based cocktails on their menus were few and far between But now I would say over 60 of the cocktail bars I go to have some style of Sherry Cobbler on the menu he says Kalani Parducci lead bartender at the Rosswood in the Rivers Edge Hotel in Portland Oregon also notes the growing prominence of Sherry based cocktails on U S bar menus Previously FORTIFIED and FLAVORFULThe Smoke on the Water pictured left from Lakeside restaurant at The Wynn Resort in Las Vegas mixes Sherry with rye and Scotch
